It looks good at the moment but without knowing what you have planted it into we can’t really say when its going to be dinner time for her.

Its an organic soil with 5.5-6pH

Seems fine, judging by the leaf at the bottom of the picture it might be a little too cold, try to find a warmer place if possible. If you can’t don’t worry, it will still grow perfectly fine and healthy. It might need some extra calcium, since it’s an organic grow try adding some fine egg shell powder you can make at home by crushing some egg shells and adding it to your next water, you will see the results in a month.
