You have a lovely plant over there!! 
Those large leaves are the primary leaves that provide energy to the plant and will be cut off if you decide to defoliate. It is not worth training them, as they will not continue to grow. Instead, the shoots that emerged after topping will be ready to be trained as soon as they start to stretch.

Hi @Vanillabean, looking good! As @ELI said, best to leave the leafs alone for now, those are essential solar panels, let her get a bit bushy and you can apply LST as you go.
