I have 10 outdoor plants that have began to fIower I am about 6 to 8weeks in on flowering. My bigger plants seem to be in mid flower and my babies are in the early flowering stage. When should I harvest? Should I wait til all my plants reach full flowering?

Your 10 plants are all the same? Different strains will be ready at different times/speeds so they might not be ready to harvest all at the same time.
Ideally, you’ll need a microscope (or jewler’s loupe) with at least 40X-100X to get a look at the trichomes (those beautiful crystals). Clear=not ready.
I believe I have 2diff strands my older plants have less white pistols and there branches are turning a dark purplish color. But my other plants are still in early flower. Im not sure if I should let my older ones continue to flower until all my plants pistols look the same. I also think some of my plants might be hermans so im not sure how that is affecting them to flower just notice that.
Reverting From "Flowering Stage - Back To Vegging Stage might cause your plant to turn HERMAPHRODITE
There are basically two reasons why you might end up with a hermaphrodite marijuana plant on your hands. These are genetics and stress.
As this is not always the case, Reverting From Flower to Vegging will cause "Confusion & Strain/Stress on the plant… I have taken clones from “Late Flowering Genetics” - Reverted back to vegg & Had a lot of success in doing so.
Light Leaks/Pollution can also be a factor here
When you revert from Flowering to Vegging, the plant will first grow 1 Leave baby leaves, then 3, then 5 ect…

A hermaphrodite marijuana plant is a marijuana plant which has both male and female characteristics. The good news is that the female characteristics make it at least theoretically possible to collect bud. The bad news is that growers have to be hyper thorough about removing the pollen sacks produced, due to the male genetics. Otherwise there is a very strong probability that these will burst and pollinate the female part of the plant.
Basically you’ll have to discard [I wouldn’t take chances]

Yes my plants were very stressed due to the heat wave and I had to keep alternating there direct sunlight to keep them from burning up. On at least 2 of my plants that have been struggling to grow I see pollen sacks hanging around areas where there is a small bud developing. So your saying I should cut off the pollen sacks? I don’t have any pics of them I will try to take some and upload them.

Lol I’m a woman first time grower. I am sure the plant has both very small buds with pistols and pollen sacks that seem to be carrying several seeds on different branches.

All I can Say is Ouch… I’ve heard of some cultevoirs cutting off the pollen sacks. But i’ve never had this luckily… From first hand experience i’ll be lieing if i’d say yes or no. Sorry for the late reply…

Ah yes, much better. They’re nice & milky so it’s totally up 2 you! I’d wait for about 20% - 30% amber. Here’s a quick quide.
Trichomes & Harvesting
Most growers tend to wait until the majority (around 70%) of their trichomes are milky/cloudy in appearance, with the first signs of some (perhaps 30%) turning amber. This also allows yields to increase slightly compared to early harvests with clear/colourless trichomes. The high becomes more rounded with stronger body effects.
Some growers prefer to wait until most of the trichomes are starting to turn amber/red. The cells that secrete cannabinoids and terpenes are starting to die at this point causing the trichomes to turn amber. The resulting cannabis tends to have a heavy, stoney feeling with strong body effects ( Personal preference )
